This Paleo Diet Mayonnaise recipe, made from scratch, is hands-down the BEST one I have tried.
I created it with a view not only to great taste, but superior nutrition. It has a couple of 'secret' ingredients I have not seen in other recipes.

Not long ago, I bought a 'Paleo Diet Mayonnaise' from a health store. The ingredients looked good, the primary one being Avocado Oil. I thought, how can I go wrong with this?
While the product containing avocado oil and other ingredients, including organic eggs, did not taste bad, it did not hit a home run with me. I had tried creating recipes using superb extra-virgin olive oil and apple cider vinegar plus seasonings, and they were a flop. The cider vinegar / olive oil combo did not create a base for a great-tasting mayo.
Most other oils used in mayo are bad for us. The brands sold in health food stores use these unhealthy oils. I categorically REFUSE to buy ANYTHING with Canola Oil (coagulates - thickens - the blood. Yes, you heard right)! I also will not buy anything with soy oil (or soy anything) - BAD for hormonal health! Safflower, sunflower and peanut oils are also off my list - too refined, too much Omega-6.
You might find this a little odd, but my favorite commercial mayo of all time for taste is Hellman's. I probably would still say so today. HOWEVER, knowing how far down the tubes the conventional food industry has gone, buying Hellman's is not an option for someone like me, and hopefully not for you either.
SO, I wanted to create a Paleo Diet Mayonnaise that meets a standard of excellence for both taste and health - because as far as I know, it doesn't exist commercially.
The recipe below is for you if you are the kind of person who won't settle for anything but optimal health. Even if you are not that kind of person, maybe you will thank me later when you don't come down with the latest dreaded food-borne illness from GMO's, toxins or the 'healthy-in-name-only' oils in so-called 'healthy, natural' products.
INGREDIENT LIST # 1
2 Tablespoons Spectrum Distilled White Vinegar (it is made from beets)
6 med - large egg yolks from pasture-raised chickens (if duck eggs, quantity of 4 is sufficient)
1/4 t Himalayan salt
1/4 t mustard powder
1/4 t tumeric powder
1/4 - 1/2 teaspoon organic onion granules

Macadamia Nut Oil (please buy only the BEST - you can find it HERE)
NOTE: The 2 'secret' ingredients below are optional if you are willing to settle for just a 'great' mayo, but mandatory if you are a nutritional fanatic like me who aims for 'superb.'
Totally Raw Rosita Ratfish Oil - 1 - 2 droppers full
Raw Emu Oil - 1 - 2 Tablespoons full
COMBINING PALEO DIET MAYONNAISE INGREDIENTS
Add all ingredients from list #1 to a blender. Have your bottle of Macadamia Nut Oil at the ready. **Place blender cover on with hole at the top uncovered.** If your blender has a low speed, put it on low; if not, you will still get a a great result.
Turm blender on and drizzle a tiny stream of the mac oil in until liquid begins to get thicker. **I cup my hand over the pouring process to keep little splatters whipped up by the blending from getting out of the top of blender.**
Stop blender and add Ratfish Oil and Emu Oil, then resume. Add more macadamia oil until product is thick as Greek yogurt. Use a spatula to empty the mayo into a glass container, cover and chill.
Your Paleo Diet Mayonnaise can be mixed as is into salad, or diluted with a bit of water if desired for easier distribution over the vegetables. It is great for making a 'Paleo sandwich' - spread on juicy Romaine lettuce leaf with a slice of your favorite cheese and make your own lettuce wrap. Use your imagination - chicken salad, added flavor for steak, etc.
