Pemmican is a favorite - the ultimate power bar - for modern Hunter/Gatherers whether on a walkabout in the outback, the nutritional desert of a local shopping mall, or as a high-energy food for your outdoor adventures.

Are you are a hunter gatherer foods enthusiast?

If so, you already know it's a jungle out there when it comes to finding real food. As you may know, pemmican is a traditional food of the North American Indians who took it with them on their hunting expeditions. Pemmican was among the early foods that served the purpose of a 'power bar.' It is a concentrated, nutrient rich, easy-to-carry, highly nourishing source of energy that needs no refrigeration except under near-tropical conditions or during lengthy (more than a week or two) storage. 

Surely you will want to know how to make the ultimate take-anywhere power bar. While a bit labor-intensive, making pemmican is a great way to save yourself from settling for high carb, sub-standard snacks or toxic conventionally raised meat while out and about.

You may not know this, but primal diet of the healthiest peoples was much higher in fat than we are led to believe. It was not a high protein / low fat / low carb diet; it was a high fat / moderate protein / low carb diet.


Paleo Diet Recipe:
Basic Pemmican

INGREDIENTS:

Eye Round Roast - frozen - approx 3 lb

Beef Fat (suet) - approx 1 1/2 lb

salt to taste

organic dried currants - approx 1 1/2 cups (optional)

INSTRUCTIONS:

Cut eye round roast across the grain into thin slices (approx 1/8 inch thick). Lay flat on dehydrator shelves and begin drying. Temperature around 125 degrees fahrenheit / 51 degrees celsius is ideal. Drying time approx 6 - 8 hours.

Once dried, pulverize eye round in a Cuisinart type blender. Pour into large bowl and mix in dried currants if desired (the currants add a complementary sweet note to the richness of dried beef and fat. Sprinkle in 1/4 teaspoon salt and mix.

Dice the beef fat into small cubes and render on low/med heat until pieces turn brown and crispy. Strain off liquid fat into the bowl with the pulverized dried beef and currants. Mix thoroughly. The beef powder and currants should be richly drenched with the rendered fat liquid.

Spoon mixture into cupcake tin (stainless steel if possible) and tamp down well with back of a teaspoon. This will make for a more solid pemmican 'cake' that will hold together better.

Place tin in refrigerator overnight. To get pemmican out of tin, run inch or two of warm water in kitchen sink. Place bottom of tin in water, being careful not to get pemmican wet. Remove tin from water quickly (10 - 15 seconds).

With a small paring knife, gently pry in a few spots around circumference of each piece and your pemmican cakes will pop out. 

Store in closed wide-mouth glass jar either at room temperature or in refrigerator. 

Grab a couple and toss in small container for a genuine paleo diet snack when you are away from home.


Paleo Diet Recipe:
Gourmet Pemmican
with Coconut & Annatto

Paleo diet recipe pemmican gourmet style!

Using basic pemmican recipe above, add the following:

2 cups coconut chips **(larger pieces - not the usual shredded coconut flakes - the chips contain coconut oil whereas the shredded is desiccated - has had the coconut oil extracted from it).**

1/2 cup organic currants

1/2 teaspoon cinnamon

1 tablespoon annato seeds for exotic orange color and rich flavor


INSTRUCTIONS: 

While gently rendering the beef fat in basic recipe above, put coconut chips and cinnamon in Cuisinart and process until it turns somewhat liquid. You likely will need to stop the processor a few times to scrape the coconut off the sides of the container so you can blend it some more. 

Add currants and blend until currants are blended in. Set aside.

Add annato seeds to beef fat and render for another 10 - 15 minutes on gentle heat.

Combine coconut/currant mixture into pulverized dehydrated eye round/whole currant mixture.

Strain pieces of beef fat and annatto seeds out of rendered beef fat and add the remaining liquid to the other ingredients. Mix thoroughly.
